Peppery Lobster

Ingredients

Lobster medium sized, 2
Egg 1
White pepper ½ tsp
Corn flour 1 tbsp
Soya sauce 1 tsp
Garlic cloves 5, finely chopped
Ajinomoto ½ tsp
Spring onion 2 sprigs, finely chopped
Green chillies 2, finely chopped
Oil for frying
Back pepper for sprinkling
Salt to taste

Method

Take the meat out of the lobster, transfer it in a bowl and mix it with egg, salt, corn flour, ajinomoto and keep it aside. Blanch the lobster shell in boiling water. Oil it well inside out and keep it aside.

Heat one tbsp of oil and shallow fry the lobster meat; to this add garlic, ajinomoto, soya sauce, salt, white pepper and green chillies, stir fry it well. Take the cooked meat, arrange it inside the lobster shell, garnish with finely chopped spring onions, sprinkle black pepper and serve.
