Gobhi Au Gratin

Ingredients
Cauliflower ½ kg
Cheese cubes 4
Butter 4 tbsp
Tomato 3, sliced
All purpose flour (maida) 2 tbsp
Salt to taste
Pepper to taste
Red chilli powder (lal mirch powder) ½ tsp
Milk 2 cups
Method
Barely cover the cauliflower with water, add salt, and boil and remove from heat just before it’s done completely, drain the water. Heat butter in a pan, add all purpose flour (maida), salt, pepper, red chilli powder (lal mirch powder), stir it over low heat. Add milk and continue stirring, when the sauce thickens turn the heat off. Add half of the grated cheese to the sauce and blend well.
Arrange the cauliflower in a buttered baking dish, pour half the white sauce over it, arrange half of the tomato slices over this pour and repeat. Pour the remaining sauce over the flowerets and arrange the remaining slices of tomato, sprinkle the rest of the grated cheese, dot with dollop of butter and bake until the cheese turn light brown, approximately for 10-15 minutes and serve hot. Gobhi Au Gratin is an excellent side dish.
