Javarisi Payasam / Sago kheer/ Sabudana Kheer

This dessert is prepared in most part of India but known with different names. Down south it is called as Javarisi Payasam and in other part Sabudana Kheer. It is basically prepared during festivities, a popular recipe consumed during fasting.

Javarisi Payasam / Sago kheer/ Sabudana Kheer

Ingredients

Sago (Sabudane/ Javarisi) 1 cup
Milk 2 cups
Sugar 1 cup
Water 1 cup
Ghee 2 tbsp
Cashew nuts (kaju) 10
Raisins (kishmish) 2 tsp
Condensed milk ½ cup
Cardamom pods (elaichi) 2-3, powdered

Method

Bring water to boil, add sago (sabudane/ javarisi), and keep stirring so that it does not stick to the base of the vessel. Once it gets cooked add sugar, stir till it dissolves completely. Sprinkle the powdered cardamom (elaichi) and let it simmer for a while.

Heat ghee in a pan roast cashew nuts (kaju) and raisins (kishmish) and pour it over the kheer. Once done, remove from heat, add milk and condensed milk, stir well, serve warm.
