Malpua

Malpua are sweet Indian pancakes or fritters. It is prepared in various parts of the country in various ways. Here is the regular version, fried in oil and dipped in sugar syrup. Indeed a lip smacking delicacy.

Ingredients

All purpose flour (maida) 2 cups, sieved
Yoghurt/curd (dahi) 1 cup
Baking soda 1 pinch
Fennel (saunf) 1 tsp
Cardamom powder (elaichi powder) ΒΌ tsp
Sugar 1 cup
Water 2 cups
Oil for shallow frying
Almonds (badam) for garnishing
Silver foil (chandi virq)

Method

Make sugar syrup by boiling water and sugar, cook till it reaches one string consistency. Turn off the heat. In a mixing bowl mix, all purpose flour (maida) and yoghurt/curd (dahi) add little water at a time and prepare thick batter. Add fennel (saunf), baking soda and cardamom powder (elaichi powder) and mix well.

Take a shallow frying pan, bake it like dosa and dip it in sugar syrup. Arrange in plate; add syrup from top if desired. Decorate it with silver foil (chandi virq) and garnish with almonds (badam).
