Milk Poli / Pal Poli

It is a very popular recipe of south, one of the traditional sweets, known for its taste. Pal is term used for milk. Polis are made in numerous ways, with semolina, maida and soaked in sweetened reduced milk. Rich in taste… yum…yum…yummy!

Ingredients
Semolina (suji/ rava) 2 cups
Salt 1 pinch
Ghee 4 tsp
Milk 4 cups
Sugar 1 ½ cup
Cardamom powder (elaichi powder) ½ tsp
Saffron strands (kesar) 7-8, soaked in warm milk
Dry fruits ¼ cup, chopped for garnishing
Method
Knead semolina (suji/ rava), slat, ghee, cardamom powder (elaichi powder) and saffron strands (kesar) in a mixing bowl, add little milk so as to make firm dough. Roll out small puris, deep fry in ghee or oil, remove excess grease in absorbent paper and store in air tight container.
In another vessel boil milk, reduce the flame and cook till the milk gets reduced to half. Keep stirring continuously; add sugar and let it cook over low flame. Once done remove from heat.
To this milk mix add polis one by one, let it soak well, serve immediately in serving bowls and pour some more milk concoction over it. Serve in individual bowls as soaked polis tend to stick together, garnish and serve chilled.
